Here’s a hint on how to draft beer correctly.

The technique of correct beer drafting includes three steps.

  • Step one: Place a glass obliquely just under the pipe orifice, so that beer can flow down glass walls to the bottom. By doing so, only an insignificant amount of carbon dioxide is released. Fill a third of the glass. Leave the beer for a minute, so that the foam can rest.     
  • Step two: Fill the glass with more beer. Fill it with beer to reach the upper glass edge. Again, wait for another minute, so that the foam can rest and become firm.  
  • Step three: Fill the glass with beer to reach the right amount of beer in a glass, producing a typical 3 or 4 cm thick foam.
